HOW TO CUT LAVENDER

Source: WikiHow
Lavender is best cut in the morning after the dew has evaporated, but before the midday sun has dissipated some of the fragrant oils. To cut, hold the stem and cut no less than 2" above the woody part. Cutting too low down will permanently harm the plant. Bundle your handful of lavender with elastic bands to keep them tidy.

FRESH CUT LAVENDER AFTERCARE

If you plan to keep your freshly-cut lavender in water, be sure to trim the ends when you get home and change the water daily - the lavender should last for about a week.

DRYING LAVENDER

If you plan to dry your lavender, keep it in the water for no more than 3 days.Trim the ends, and separate your bunch into smaller bundles no larger than 2". Secure the ends with an elastic band and hang it upside down in a dry, dim, space for 2-4 weeks (depending on your humidity).A fully dry stem should snap easily - not bend - when you break it
